Despite the change at the name, they still offer a french style vegetarian buffet. However there are few vegan options, almost all the main dishes are made with cheese, butter or both.

fine lunch buffet - Edit
Located in a lovely central square, this place offers a nicely laid out buffet. When we went there, we found the staff to be helpful and a bunch of vegan options.
There are not a lot of other veggie choices in Aix. I was told that Cafe des Mots has vegetarian options, but it was closed when we went there. There is also an excellent Lebanese place in the Palace of Justice square, it has a great vegan plate. Otherwise...not too many choices in Aix for Happy Cow members.

No vegan main courses available - Edit
The only vegan option they had was a salad from the buffet, as all the main courses contained cheese. I can find a nice vegan salad in any restaurant.

"Vegetarien à la francaise" - Edit
I came twice at twelve or one o'clock. There are very few vegan options and fish on the evening menu. It is typically "vegetarien a la francaise". Anyway not very friendly.

Charming - Edit
Small, charming little cafe in the town centre. Open at lunchtimes only. All you can eat buffet with plenty of different dishes - salads (with a variety of dressings), grains, lentils, bread, soup, bakes and quiches.
When I visited in January 2012, the price was €14 for lunch.
Outstanding for vegetarians, but slightly disappointing for vegans as most of the hot dishes (and some of the salads) contained cheese. But well worth a visit.
If you're in the area in the evening (when La Catine Vegetarienne is closed), I noticed that there is an Chinese restaurant called Le Dalat (on the corner of Rue des Bernardines and Rue de la Couronne) which has a set vegetarian/vegan menu for €14.

The man working at the cafe was so kind and friendly. I ate here 3 times while in Aix because it was the only veg restaurant there. One time the vegan choices were stellar, the other two times vegan choices were few compared to the spread of the buffet. The staff did not seem to completely understand veganism, as they often were unaware or unsure of which items were vegan, and often first said something was vegan and then corrected after I questioned more specifically. There were never vegan desserts.
Pros: very nice man who works there, all-you-can-eat, healthy

A pearl in the land of cheese - Edit
Very tasty and healthy fare. After 2 weeks struggling to eat well as a vegetarian family travelling in France (i.e. eating too much bread, cheese, and pastries), this restaurant totally hit the spot. Went twice and both times came out feeling so good from eating such good and healthy food. Rivals some of our favorite vegetarian restaurants in Canada.
If you're in need of a break from bread and cheese, and you enjoy eating a variety of tasty grains, beans, lentils, and vegetables, look no further!
Lunch only, reservations recommended as it was very busy and we were lucky to get a table. Reasonably priced.
