La Berenjena
Serves meat, vegan options available. A popular restaurant on the main street that prides itself as a place serving vegetarian food and more. Most of the menu is vegetarian, and vegans will find quite a few dishes like a seitan sandwich, the super berenjena (berenjena is Spanish for eggplant), the boliche and the jinete. Most tables are outside on a terrace. Open Mon-Sun 10:00am-10:00pm.

Great vegan food - Edit
I went to this restaurant after reading about it on a vegan blog. It didn't disappoint. The waiter knew the word "vegan" and could tell me what was vegan or not.
We ate there two time, I took the Super Berenjena and the gried rice with veggie. Both very good, but they did have a soya sauce taste.
I would recommend to every vegan visiting Cuba.
Pros: friendly staff, know what vegan means, good food

Great Vegetarian & Vegan options - Edit
A delightful discovery in Vinales - ate here twice during our 4-day stay. Mostly vegetarian and vegan with some omnivore options. Wonderful smoothies, great eggplant dish. Enjoyed all our entries. Lovely service including chatting with the owner and the matriarch who created the menu.

Seitan! And best place to eat in Vinales! - Edit
I was really glad to find a restaurant with more than one or two vegetarian options in Cuba, Although the sign says that La Berenjena offers "comidas vegetarianas y mas", it really is mostly vegetarian.
I ate there a couple of time and it was usually pretty good. I tried most vegan main dishes, and the ones I recommend are the Super Berenjena (with seitan!) and the Boliche (with pureed root veggies).
I also fell in love with the Candela rum-based drink. If you like gingery juices and alcohol, you are going to enjoy this. I ordered it every single time.
I couldn't believe there was actually seitan there. So, I ordered twice the seitan sandwich to go, which is a veganized version of the traditional Cuba sandwich. Unfortunately, there is nothing but seitan in the sandwich. It was still nice to eat for lunch during tours and on the beach, but it'd be better with tomatoes or just some sort of spread to make it moist.
The place is packed, so get there early or be prepared to wait.
