Some options - Edit
I went with 2 meat eaters at the Shibuya location. They had several vegan options, cucumber rolls, gourd roll, and if your brave the natto rolls(which i personally liked). Vegetarian options I tried were sweet soy sauce dango and egg sushi. All were good, easy to order in English to your table via conveyor belt. Great prices for a budget and short wait times.

The sushi here was really nice and cheap. Perfect for a light lunch or make it how you want.
