The staff told me they only use a vegetarian broth -- they don't have a meat broth. You choose and weigh your own veggies and pay by the pound. They have many different types of veggies and tofu! There is a high risk of cross-contamination at this step. Then they cook it for you and serve you the veggies in broth. You can choose your spice level. They also gave us free orange juice (not sure if they always have this).

Choose your own yummy Hot Pot - Edit
I usually don't love hot pot, because I never cook things at the right temperature. This was the best of both worlds since I got to choose all my add-ins but the professionals did the cooking. The restaurant was very helpful in identifying what was vegan and double-checking ingredients. The food was ready pretty quickly and was tasty. It was spendy, but I got two meals out of it, which made it of value! I will definitely go back!
