Serves fish, vegan options available. Ryotei (traditional high end Japanese dining) serving Buddhist vegan set meals. Lunch and dinner, fixed-price meals only. Reservations required at least 3 days in advance for vegan meals. English spoken. Food is served course-by-course in an old merchant's house. Off route 159 (main street from Kanazawa station), turn left 3 blocks beyond Omi-cho intersection. Note: kitchen may stop serving 30-60 minutes prior to closing, check ahead. Open Mon-Sun 11:30am-2:00pm, 6:30pm-10:00pm. Arrive by 7:30pm.

An indescribable experience start to finish. Make sure to reserve and request a vegan meal. When we visited for lunch we reserved the day before which was sufficient. For dinner they require 3 days notice. For lunch, at least, my husband had to have the vegan meal, as well.
Dining is in private rooms which are quiet and allow you to focus on your meal and your companion. Each course was beautifully presented and most were delicious, all interesting.
Highly recommend to anyone, vegetarian or otherwise, for the food and the experience. Really unforgettable

Kotobukiya - Kaga shojin ryori - Edit

If you want a vegan meal at Kotobukiya, you need to reserve 3 days in advance; and it's not cheap (around $45-50 for lunch; $80-100 for dinner, depending on number of courses). So it's not a casual meal; it's an occasion. That's the downside.
On the upside, what I had at dinner there was 8 courses of delicious and beautifully-prepared shojin ryori (Buddhist vegan cuisine), served course-by-course on fine pottery and lacquerware; a feast for the eyes and mouth. And the restaurant itself is in a restored 150-year-old machiya townhouse.
It's Japanese formal dining for vegans, and there are very few places where you can find it done this well.
If you're interested, your hotel can probably help with reservations, or use GuruNavi (gurunavi.com) for assistance.

Pros: Excellent food, Excellent service

Cons: Expensive (but not out of line)
