Excellent vegan cheese sub for the scarmozza

Pumpkin pizza without tallegio and pecorino, sub vegan cheese, a creamy delicate vegan option with a vegan Nduja which was delightful.
Though both good separately, the sandwich of the two pizza's was a game changer.
These were both paired elegantly with a glass of the dandelion vineyard reisling from the Eden valley SA which was vegan.
After a short wait, given we didn't book and a table needed to be prepared, we were professionally shown to our table by a Maitre D who then explained the menu, soomln after he introduced us to our server Chelsea who was professional and a delight.
She seemlessly and professionally served our table with an air if experience and relaxation making me feel comfortable and confident in my vegan choices. She even offered personal notes on the choices making me feel sure if my vision for the meal.
I really appreciated the customer service here and will be sure to recommend kneading Ruby to anyone visiting Wollongong.

Yummy Italian food spot in Wollongong! - Edit
As someone who enjoys Italian food, Kneading Ruby is one of my favourite spots in Wollongong. I have tried their pizzas and pastas which are all amazing but their garlic bread steals the show. It is absolutely divine! I highly recommend this spot to anyone visiting Wollongong. They can be super busy, so remember to book a table in advance.

Really great vibe in here. Table service. Food was full of flavour and cooked with love. Mushroom pizza, kiplfer potatoes and grilled eggplant sides vegan pasta. Had a nice vegan wine too.

Between 4 of us we enjoyed the garlic bread, olives and potatoes with a margarita pizza, Radicchio salad and the Cavatelli ragu. It was plenty of food to eat and the taste was amazing.
The restaurant has a beautiful layout and the staff ensured we had our glasses full at all times, they knew the vegan options as soon as we asked and couldn’t have been more attentive.

From start to finish this place was great. Amazing friendly staff. Good amount of vegan options/ modifications on the menu. Would definitely recommend the cavatelli ragu.. I wouldn’t stop talking about how delicious it was for hours, maybe even days.
