Ask for the vegan sushi boat which comes with 40 pieces including a plantain sushi. Staff speak English. Open Mon-Fri 2:00pm-10:00pm, Sat-Sun 12:00pm-10:00pm.

sushi boat is amazing - Edit
We ordered the $29US vegan sushi boat. It was amazing. None of the sushi had nori. It was all sushi with white rice on the outside. One of the rolls had plantain on the top and broccoli on the inside and another had tofu. One had a crispy topping which was the best. The three of us shared one boat and we were all stuffed. Mind you we were still a bit full from the rainforest chocolate tour we had gone on a few hours earlier.
Our vegan food options in La Fortuna are certainly better than those in Monteverde.

Great little restaurant! - Edit
Cosy little Japanese restaurant in central La Fortuna. Highly recommend the vegan sushi boat which we had to share between the two of us and was plenty - also came with a free starter of edamame. Not your standard sushi as some made using typical Costa Rican ingredients like plantain, but also avocado which is widely used there. Delicious and nice variety.
The staff speak English and are really friendly. They were happy to call us a taxi to get back to our hotel and made us wait inside as it was raining!
Pros: Marked vegan options, Interesting choice of drinks, Epic sushi boat
Cons: Fairly small so may fill up quickly
