Great, fresh Vietnamese food for cheap. The menu doesn't cater specifically to vegetarians or vegans (this type of cuisine just happens to be so) and items aren't marked, so you may need to specify vegan "no butter" etc. when you place your order. The staff seems happy to oblige and make substitutions when necessary.
I highly recommend the mock duck spring rolls, almost any mock duck entree, and the curried mock duck bánh mì sandwich.
Pros: Tasty, healthy food, Great prices, Family-owned and operated
Cons: Small location, if you want to eat there, Shared lot is often full on weekends

This Vietnamese deli is small, family run and serves a wonderful mix of sandwiches (including mock duck and curried mock duck), tofu and mock meat broken rice plates, noodles salads and soups. Their vegan options are so delicious that it has become a popular haunt for hungry herbivores eager to find a wholesome and cheap option. They also have a deli counter where you can pick up sandwiches if you are on the run. It is easy to have a filling lunch for less than $6. Highly recommended.

Jasmine Deli is the in-the-know spot for people looking for authentic, light, tasty and home-cooked Vietnamese food. The service is always friendly and fast and there are numerous vegan items, including mock duck curries, cold salads, huge bowls of noodle soup with tofu, stir-fry rice plates and my favorite for quick-eats, the mock duck baguette sandwich (if vegan, specify no butter). All of their prices are under $9 and the sandwiches cost only $3 and make a great meal. Two issues, though: they don't accept credit cards and they have highly limited seating. Otherwise, this is the gem of the many Vietnamese restaurants in Minneapolis.
