More dukka please! - Edit
I cann't believe I have not discovered Jacketz sooner. The (few) vegan options are labeled on the menu. Potato with green vegetables, dukka (pistaches) and humus is very tasteful.
Pros: very tasteful
Cons: few vegan options

Great Place to Eat - Edit
*CAUTION*
Cheese in The Netherlands is not vegetarian. There is a product called stremsel which is the stomach of a calf. This is used to keep cheese edible. Jacketz does not use vegetarian cheese so you must choose a potato without. You can still get cheese with vegetarian stremsel most of the time it is available from a health shop or a "natuurwinkel". If a cheese is organic or "biologisch" it is suitable for a vegetarian.
Jacketz had great service and great food. It was brought to yoou quickly and really inexpensive! Around 10 euros for a good potato. Ordering 1/2 a jacketz is the best thing to do because they are very big!
I would definitely recommend trying the hummus and dukkah. It's a great place with a cosy atmosphere!
Pros: Great and cheap food, Friendly service, Made quicly
Cons: No vegetarian cheese, Quite small

Healthy options - Edit
Can't beat the combo of veggies and low prices leaving with a happy, full tummy. You can even get a glass of wine with your spud.
Half a potato is the way to go unless you're a hungry teenager!
Wait-gals are very helpful / friendly also!

The only such cafe in the Netherlands - Edit
For vegetarian, try the beetroot filling, with various cheesed on top.
For vegan, ask on space. I think, green veggies, hummus and nuts / dukkah should do. Though personally I did not like dukkah very much.
Attention! The potatoes are huuuuge, my advice: take 1/2 potato even if you are very very hungry.
Pros: big portion size for small price, very delicious, unique in Holland

Lovely! - Edit
I really enjoy this place. They combine nice authentic elements (like wooden chairs) with a stylish interior. The potatoes are lovely! They use biological ingredients from local farmers. Their one and only desert is a "baked" apple filled with other ingredients every month. I really see the possibilities of the two lovely owners making this into a franchise :)
Pros: great food, superfriendly owners/customer service, cosy but stylish
Cons: only branch

Excellent veg options - Edit
What a lovely place! Tucked into the middle of pictureseque Leiden,
they're on a mission to make the baked potato respectable.
The range of sauces and toppings ranges from healthy to sinful (their
dukkah is especially lovely). They serve a half-potato with, as they
point out, the same amount of topping as a full one, so you can adjust
the proportion of potato you end up with.
Everything about the food was a delight. In addition, the folks
behind the counter were great guys. The store is clean and calming.
Even the restroom is neat and laid out well. A little oasis.
These folks have ambitions to expand and, though it'll be a long time
before I see them on the US Coast, I'll be sure to give them my
custom wherever I find them.
(Maybe I'm just a sucker for these two-guys-trying-to-make-it-big
places -- Stoats in Edinburgh is another that comes to mind. I mean,
it's just a darned baked potato place, and here I am feeling
sentimental. See? That's what a great eatery does.)
Pros: delicious, inexpensive, great staff and store
