Great Place for Vietnamese - Edit
Indochine has a portion of their menu dedicated to vegetarian entrees. The food is made fresh and the service is excellent.
I would recommoned the V4 with a spring roll (instead of the egg roll). Rice noodles with mixed vegetables and tofu. The V3 is also good, which is the same thing, but in a Pho soup.
They also a great bhan mi sandwich with tofu (disregard the mayo to make it vegan).
If you're in New Brunswick check this place out.
