This food truck visits the Kashiwa campus of The University of Tokyo every Thursday lunchtime. They sell several types of Indian curry, one of which is suitable for vegetarians and vegans. I confirmed with the staff member that it does not contain dairy products.
The spinach curry costs 700 yen. It has gone through several modifications since the truck started serving the campus a few years back. In particular, the side dish seems to vary now and again. They used to have a bit more vegetables, some chickpeas, cucumbers, and onions marinated in chili sauce. At present, it's sweetcorn. The serving size of the curry seems to have reduced slightly. However, it tastes really good.
If you want to eat there, forget about taking the plastic bags, spoons and forks and just walk over to the cafetaria. Eat inside and use the metal spoons. On the food truck counter, you can also find garam masala and chili powder to sprinkle on your food.
The location is in the middle of the campus, near the main entrance, close to the cafeteria and COOP shop.
