Barely any options - Edit
Was excited when I saw the reviews, went to the restaurant and everything has egg and milk in. A vegetable starter was the only vegan option, even sorbet had a milk warning. The shop next to it has a single vegan sandwich, that is the only thing available.

There's to-go options right by the expensive restaurants that include a few vegan options such as a falafel sandwich and a salad. The sandwich was delicious! I highly recommend it!

A wonderful sit-down restaurant with several vegan options in Terminal 2e. - Edit
The vegan options were filling and delightful—it’s so exciting to get risotto done vegan, and it comes that way on the menu! The service is also friendly and excellent. (I speak a little French so I think that helped.)
