Das Nicolay Hotel inkl Restaurant sucht man wegen dem Mindset und dem tollen veganen Essen auf. Es liegt (wirklich) direkt an der Mosel.

Zum Wellnessangebot kann ich nichts sagen, da ich diese Möglichkeit nicht in Anspruch genommen habe. War zum 1. Mal in einem veganen Hotel. Fand es super auswärts so eine große Auswahl beim Frühstück zu haben, bei der ich zu absolut allem greifen konnte. Auch das a la carte Essen am Abend ist sehr lecker. Beim Geschmack hatte ich bisher die Erfahrung gemacht, dass man auch -zu meiner Freude- nicht krampfhaft versucht, dem Geschmack von Fleisch nachzueifern.
Zudem gibt es grundsätzlich die Möglichkeit, Überraschungs 2/3-5-Gang-Menüs am Abend zu bekommen. Da das Restaurant für alle offen ist, würde ich für abends lieber immer vorher telefonisch/persönlich (kurz vorher) reservieren/anfragen.
Bei der Zimmerwahl scheint mir ein Doppelzimmer die bessere Wahl. Beim Einzelzimmer war das Bad beengt. Beim Einzelzimmer Klassik und Doppelzimmer Klassik ist ein Badbesuch wie eine Zeitreise.😄Aber so lange alles da ist und funktioniert, trägt es den Nachhaltigkeitsstempel und frühere Materialien waren eh oftmals viel robuster. Zeltlingen scheint ein sonst sehr touristischer Ort an der Mosel zu sein.

Something that had been planned for years was a visit to Vegan Hotel Nicolay 1881 in Zeltingen, Germany. Last june it finally happened, we spent the night, ate and drank in this 100% vegan hotel on the Moselle.
Read moreHow nice is it to be able to order everything on the menu because it is all guaranteed without animals. That you can eat amazingly good plant-based food was once again confirmed during this visit. You can see what we ate in the evening in the image below.
A delicious, full-fledged dinner, delicious ice cream, cappuccino with a hump of foam and of course vegan beer and wine.
In the morning a very extensive breakfast buffet (see photos below) with all kinds of tasty snacks, savory and sweet spreads, sauces, vegetable dairy, fruit, vegetables, salads, sandwiches, coffee, tea, juices, etc. etc.

It is an amazing experience to taste what they are capable of making being all vegan, I have to admit that I wanted to ask a few times, sure this is vegan.
Now the alternatives planned based foods of something that people used to know differently, are not really my kind of thing, now I really enjoyed the experience and tasting it.
We took the vegan weekend experience, and it was a good experience, really excellent not having to see or find out if something was vegan or not.
The half-pension vegan food was good, now simple, nothing special.
The only downside is the service, only a couple of people (the owner and another girl) speak English.
It took a translation app on my phone, now the waitress was so bored with that, it really felt like she was avoiding us (bored because of us, or bored because she didn't speak English was hard to tell).

C'est en tant que cyclistes que nous avons connu cet hôtel, car la piste cyclable de la Moselle, qui relie Metz à Coblence passe juste devant.
Read moreL'hôtel est rénové petit à petit, et, pour des raisons économiques et écologiques, tout ce qui est en bon état est conservé, ce qui donne aux grandes chambres avec vue sur la Moselle, un air vintage. Petite piscine et 3 saunas ( un sauna finlandais à 90 degrés, un sauna humide à 65°, un sauna avec infrarouges).
Le buffet du petit déjeuner est impressionnant et très bon.
Plusieurs restaurants véganes. La nourriture est bonne, nous venons depuis des années, et les repas varient de très correct à délicieux.
Les patrons sont engagés et sympas. Enfants et animaux très bienvenus.

Everything in the hotel is vegan, including the spa products. It's obvious that the hotel is a labor of love by the couple running it. The old building is slowly getting renovated bit done areas of the house haven't been brought up to the current standard. Still, the creativity and care that is clearly visible in food and interior decoration of picnic areas such as the spa (with fitness room, three saunas, and a pool) makes up for it

Vegane Auszeit an der Mosel - Edit
Ein Wanderurlaub an der Mosel brachte uns fünf Tage in den Genuss des köstlichen veganen Essens im Vegan Hotel Nicolay 1881 Zur Post. Der Besitzer Johannes hat zunächst eine klassische Kochausbildung gemacht und über 20 Jahre konventionell gearbeitet, bis er Anfang der 2010er mit der veganen Idee in Kontakt kam, zunächst experimentierte und dann seine ganze Küche auf vegan umstellte. Seine Gerichte sind so auch ganz klassischen Geschmackskompositionen nachempfunden: Möhren imitieren Lachs, Seitan kombiniert mit Rote Bete Schinken. Dabei schafft er es, den Geschmack zu imitieren, ohne das Gefühl zu vermitteln, es könne sich vielleicht doch tatsächlich um Fisch oder Fleisch handeln: Optik, Sensorik und Geschmacksdrumherum stimmen perfekt, das letzte Quentchen (vor dem wir als langjährige Vegetarier / Veganer ein bisschen Angst hatten) des Fleisch- und Fischgeschmacks war dann zum Glück doch nicht vorhanden. Das Hotelarrangement - Übernachtung, Frühstücksbuffet und 3gängiges Menü am Abend – brachte uns in den Genuss, Gerichte zu probieren, die wir wohl von einer Karte nicht gewählt hätten, die aber allesamt vollkommen köstlich waren. Dazu gibt es eine gute Auswahl an örtlichem veganen Wein und - jetzt im Herbst - sehr leckerem Federweissen. Am Nachmittag wird auf einer kleinen Tafel innen vor dem Servicebereich angekündigt, welche Speisen das Menü umfasst. Bei uns wäre das am letzten Tag ein Kidneybohnensteak gewesen, wegen einer Unverträglichkeit von Kidneybohnen bei einem von uns ging die Stimmung bereits in den Keller, wir haben das aber beim Service frühzeitig (!) am Nachmittag angebracht und so wurde am Abend stattdessen ein Sojasteak in gleicher Zubereitung serviert. Der Service ist freundlich und überwiegend engagiert. Die Räumlichkeiten des Restaurants und der Weinstube sind irgendwie in der Entstehungszeit von 1968 stecken geblieben, den Willen zur behutsamen Modernisierung kann man in der Postkutsche, wo ab Mittag der sehr leckere vegane Kuchen serviert wird, erkennen. Das Bonbon für Hotelgäste: eine kostenfreie Weinprobe im Heinrichshof, einem veganen Weingut, das seine Proberäumlichkeiten nur wenige hundert Meter die Strasse hinauf eingerichtet hat.

Very nice vegan hotel! New looking wellness area, the saunas look like new from the factory! The rooms are clean and spacious, a little bit outdated but because of the lovely staff I would call it vintage 😉 The breakfast buffet was very big, we don’t know what we want more. The Dinner menu was fantastic! We will stay here again for sure! We’ve felt very welcome and almost as part of the family!

Wir waren bereits 2x zum Übernachten dort und 3x hat es uns Sonntags dorthin "verschlagen". Grundsätzlich ist es erstmal klasse, essen zu können, was einem serviert wird, ohne nach Inhaltsstoffen zu fragen oder "sich gleich als Veganer zu outen". Es kann manchmal schon ganz schön anstrengend sein, wenn man nicht gleich in einem rein "veganen" Restaurant/ Hotel "landet". Die Lage ist direkt an der Mosel, von hier aus kann man Radtouren machen oder in den Weinbergen wandern. Bernkastel-Kues ist ganz in der Nähe, ein hübsches altes Städtchen, und viele weitere Bekannte Orte. Das Team ist sehr kreativ, freundlich und zuvorkommend. Hier waren wir bestimmt nicht zum letzten Mal. *****

We booked a half pension, which meant we got a set 3 course menu and complimentary breakfast every day. Plus a vegan wine tasting. Great value for money!
The food was amazing, classic german. You could also order burgers etc if you want, or when you dont book half pension.
We def will book a stay here again!

All vegan hotel nice experience but improvable - Edit
The breakfast is extraordinarily good. Hotel deals especially off season have good prices. Rooms are old (from the 80s probably) and would definitely need some renovation -some furniture is broken etc.-, the wellness area is really nice and already renovated. Food is usually okay with few exceptions and rather rustique (a lot of soy replacement and very savory sauces). Staff is very nice (you can f.ex. always ask for more food). However, hotel guests are treated a little second class, they are for example not allowed to sit and eat on the terrace. Although there's definitely room for improvement, a vegan hotel stay is something special. I recommend to come and stay here, we're already here for the second time. -pets are very welcome here-

Wir waren zum wiederholten Male im Hotel Nicolay. Die Lage direkt an der Mosel ist sehr schön, die Zimmer sind sauber und groß. Es gibt einen Wellness-Bereich mit schönem Pool und Sauna. Frühstückst und alle Mahlzeiten sind sehr gut zubereitet und immer lecker. Sonntags kann ich Brunch empfehlen!

There is room to improve in restaurant service and room utilities, but is a clean place that has a lot of great vegan food to offer. I personally find the portions too big and sometimes “heavy” on the stomach, but that can be a plus because they are similar to the german cuisine.

Granted, the hotel has seen better days, but rooms and bathroom are clean and the staff are lovely.

The hotel has 2 fully vegan restaurants which are both excellent.
The hotel is conveniently located near the water so you can either go for a walk along the river or reach the village centre in a matter of minutes.
The hotel is being renovated and they just finished the spa and sauna area as well as a spacious indoor pool.
