Tasty vegan options and great location - Edit
We stayed in this hotel for one night and had dinner here (kitchen open from 6-9pm). The hotel is conveniently located right at the Sustenpass and just before the Gotthard tunnel. Its a rather old house, but on the inside everything is beautifully renovated and modern! They also have a nice front/backyard to eat at, with a mountain view.

If you come in the afternoon though, they only have a small card with some soups and salads (vegan, but tell staff since its not labelled on the small menu). Big lunch menu is the same as dinner and kitchen is open from 11:30 to 13:00 I think.

Lucked out with tasty vegan dishes - Edit
After cycling the Oberalppass, and finding the backpackers down the road closed this was the next place we saw for a room, and to our delight they had vegan options for dinner too!! The chickpea salad was lovely, and so was the yellow curry and sweet and sour tofu. They had vegan sorbet too, which we didn't take
