Definitely Recommend - Edit
Hop Tung has a really impressive selection for vegan/vegetarian customers. Their food is always beautifully made, and their servings are typically quite large. However, I've noticed that the establishment is usually low on staff, which means that service tends to get slow, especially when traffic is busy.
Pros: Occasionally rude waiters, Service can be slow

The best Tofu General Tso ever... - Edit
This restaurant has many vegetarian options and is probably as close to a vegetarian restaurant as you will find in McAllen. The Veg-General Tso with tofu is super...well done Hop Tung! Knowledgeable and friendly staff will help you with ordering the better/favorite menu items. Try one of the funny "bubble teas"...they have a huge menu of these tapioca-pearl smoothies.
Pros: frendly staff, authentic yet vegetarian, bubble tea on the menu

Not every dish here is vegan or vegetarian but they do have however, a vegetarian menu which has a decent amount of en trees. The general tso's tofu is awesome; so sweet and very spicy. Also very very good tofu and vegetable noodle soup. Overall a very good restaurant to at least check out. I would recommend you try the tofu spring rolls with the peanut/spicy sauce. Absolutely fantastic.
Pros: friendly staff, big portions of food, onderful atmosphere
Cons: picture of a fish fried whole on wall, just a tad pricey
