Bressan Haute Cuisine at its Finest

I had read about this famous place now offering a local and seasonally changing vegetarian/vegan 3-course menu and wanted to try it. That week, the entrée had a sauce with honey and after meeting the chef himself, I was told that it would be no problem for him to either omit that completely or change it.
After reserving a table for lunch, we were greeted by the friendly staff and served the Mise en Bouche, which was a small soup made with zucchini and truffle oil. It was definitely an incredibly simple yet delicious appetizer. After that the entrée came, which was a melon gazpacho with a type of Sardian Gnocchetti I've never seen before. Of course the Granité that was originally supposed to have honey with the Macvin de Jura turned out to be simply the Macvin de Jura. Still,
an incredible taste combination. Then the main dish arrived, which was succulent home-made seitan in a mushroom gravy with mini aubergines. Unbelievable taste combination! After that they topped it off with the innovative seasonal mixed red fruit dessert with a sorbet and gelitanized strawberry.
After this, we had an espresso from their coffee menu and even that came with nice vegan sweets and fruits.
All in all an incredible experience and I would go back again to see what the innovative chef has conjured up the next time!

Pros: Friendly staff, Flexible chef, Incredible food and innovative combinations
