Pricey but decent - Edit
This was a little pricey for what you get even for Iceland standards but it was good and the food was fresh. All of the wok entrees can be made vegan but you’re paying full price for them to remove the meat with no real protein substitution.

Miso - good, tastes like your average vegan miso you’d make yourself at home
Vegan sushi roll - it was great, a good combo of ingredients
Sweet & Sour - not very good, the sauce was way too sweet
Curry - very yummy!
Teriyaki - good, like your average teriyaki sauce
Banana Tempura dessert - really yummy and unique, it came with mango sorbet
Pros: Yummy dessert, Quality ingredients , Multiple vegan options to choose from
Cons: Food took forever to come out, No protein for the entrees , Charges full price to remove meat

Open in the evening in winter! - Edit
There were only two restaurants open in Húsavík in the evening when I visited (the other being Gamli Baukur) so I was quite pleased to just get a table and find they had vegan options which were clearly labeled on the menu.
