Organic Super Vegan Restaurant Hiryu has following vegan sushi menu.
1. Organic vegetable sushi (include carrot, spinach, onion)
2. Germinated brown rice sushi-roll
3. Juwari Soba* sushi (*Juwari soba is made from 100% buckwheat flour)
4. Potato salad roll
All the ingredients are free from pesticide, fertilizer or chemical fertilizer, plant growth regulator, post harvest, chemical preservative, meat, seafood, egg, dairy product, honey, gelatin, gluten, synthetic seasoning, refined salt/sugar in the restaurant. And of course they are non-GMO.
It's prohibited to smoke in the restaurant.

organic vegan food in kashiwa - Edit
great to have a fully vegan place in Kashiwa! it just opened a few months ago, but it's very popular (on a Friday night) with both families and business people.
Read morethe front is an organic grocery store, selling local veggies and other natural products for affordable prices. the back portion is the restaurant.
we called ahead to reserve an 8-course meal ("cousu ryouri") for four people. it was shared, family-style, and was plenty. very tasty and wholesome. nothing was astoundingly good, but I think they offer really solid options to appeal to everyone. all food is served on beautiful handmade ceramics.
warning: you have to pay 200¥ for water -- I think it's reverse osmosis or negative ion water, so no free tap water I'm guessing (but ask them!).
Pros: large menu, all vegan, eco-friendly and organic, good for non-veg people too
Cons: pay for water , pricey , confusing interior decoration? (but interesting!)
