Fresh baked bagels - Edit
The bagels we tried at Hey Bagel were freshly baked and still warm. We loved tearing pieces off and dipping them in vegan cream cheese. Most of the bagels are vegan, except for the ones with added cheese. There are 3 vegan cream cheese flavors - we got the scallion flavor and enjoyed it!

Run don’t walk! - Edit
This is the best bagel I have ever had. I’m visiting Seattle from Chicago. Don’t worry my husband is a New Yorker so I have had NY bagels. On this trip I have eaten an everything bagel with scallion cream cheese 3 of the last 3 days. I’m contemplating going again tomorrow! That’s how good they are!! The Chai Latte is also so so good!!

Best bagel in Seattle - Edit
Closest to a NY bagel in Seattle. Primary complaint is their vegan cream cheese is coconut based and the seasonings fall off. Line was long but moved pretty fast.

Rip + dip! - Edit
I was gonna wait til the lines got smaller on weekends, but the hype is nonstop, so I talked my partner into going to work late on Tuesday, lol. Was it worth it? Yeah. We split a salted poppy + an everything bagel + they were hella chewy + hella seedy. Def one of the best bagel shops in Seattle. They use Violife cream cheese, which is prolly the best choice for a rip + dip sitch (it gets gloopy when it sits on a warm bagel too long) + I love that they make a scallion variation. We also tried a bialy for the first time ever + my partner was like, “I don’t get it, I’d rather just eat a bagel” + I can’t argue w/that, but it was fun to try.

Best bagels in Seattle ATM - Edit
I came in with a friend early on a Sunday and they were already forming a line. We didn’t have to wait long though. The efficiency reminded me a lot of a NY bagel shop. I tried a sesame bagel with vegan scallion shmear. The bagels come whole, not sliced with a small container of shmear on the side. They have some plastic knives so you can cut the bagel open if you want to, but I think tearing and dipping into the Schmear is the right strategy for these bagels. They’ve got an excellent chew on the outside and are fluffy on the inside. Excellent topping coverage. The shmear was also decent, reminiscent of tofutti you would find in a New York bagel shop, but with less of a coconut aftertaste. These are currently my favorite bagels in Seattle (and much easier to acquire than Mt Bagel). I cannot wait to come back.
