Bleh - bad choices, bad food - Edit
I was excited to try this after reading other reviews but it was a huge disappointment. They only had one vegan appetizer and it came out cold when I was expecting it hot. Even though they have other appetizers that can be made vegan they are also cold salads. The vegan dish I ordered was a pile of rubbery mushrooms and cooked veggies drowning in slop of red sauce. The beet and polenta was bread-like and dry. I appreciate a meat based restaurant going out of their way to have vegan options but their chefs need to come up with something better. They don’t understand a vegan palate. It just missed the mark unfortunately. #Veganuary

Exceptional! I’d rate 5 stars if I could! - Edit
I hadn’t been to the Hearthstone in ages, remembering it as traditional (boring) fine dining. I came across an old gift certificate and decided to give it a try with a friend. To say we had an exquisite experience is an understatement! I thought I’d have to struggle finding a vegan option and they had two exceptional options in their list of entrees. I had the Spaghetti Squash Pad Thai, which was delicious and satisfying and my friend, who isn’t even vegan, ordered the Seared Beet Cake (which was fabulous!) that came with Almond Milk Polenta, Roasted Asparagus & Sweet Onions, Trumpet Mushrooms and Lemon Pesto. She’s rather finicky and she kept raving about her meal. There are also several salad options including a Quinoa and Avocado Bowl and a Baby Kale and Sweet Pea Leaf Salad. I think the Sweet Corn Soup, made with Colorado Golden Squash, Chili and Basil Oil, and Purple Shoestring Potatoes might be vegan as well. We shared a bottle of rose and with the quality of the food, the ambiance of the setting, and the company of a dear friend, we had a fabulous evening. The food is pricey, but if you want a special night out or a simple splurge, the Hearthstone is a great place to go! (Also perfect for a mixed group…the menu really is fabulous.)

Great option for special occasions - Edit
My husband and I celebrated here following our elopement. The staff was fabulous, and knew about dietary preferences and restrictions from our reservation notes. The food was incredible — vegan options were 5 star. Hands down, the best gourmet vegan meal I’ve had. Highly recommend for a special evening out — get reservations early!

Couldn’t agree more! I ate there a few nights ago and was over the moon. The two vegan entrees were absolutely outstanding (and substantial). True compliments to their chef. There’s been a complete menu change since the last time I was there year’s ago. My friend and I were both delighted and impressed. (On the pricey side, but for the ambiance, quality of food, and effort involved, well worth it!)

I’m really surprised by this one star review. My friend and I dined here the other night and had a fabulous meal. My friend , who isn’t even vegan kept raving about her vegan entree. Maybe they, in fact, changed the menu? If so, sending you a big thank you because we found the food and ambience amazing!

Great to hear! We will give them a second chance! It’s only good business to offer great vegetarian and vegan options! Our friend who owns a famous barbecue restaurant told me that they were losing business from big parties with one or two vegetarians in them until they created an amazing vegetarian entree. Business picked up significantly after that. Thanks for letting me know.

Fine dining experience ++ - Edit
If you are looking for a fine dining experience in Breckenridge that will leave both meat lovers and vegans craving more, then Hearthstone is the ticket. Just be pre-warned that it is pricey and does require reservations.
Read moreSo here is our experience. Our meat eating friends that once lived in Breckenridge had called ahead to ensure the chef could accommodate vegans. To be honest, I really didn’t have high hopes, as I thought they’d have to change out ingredients in order to make it vegan. That usually equates to blah food. I also thought the portions would be small.
To my surprise there was nothing blah about our experience nor did we leave hungry. In fact, we had options off their menu! Appetizers included butternut squash coconut bisque (vegan) or Colorado squash and quinoa (minus goat cheese). Two vegan entree choices were spaghetti squash pad Thai or grilled trumpet mushrooms. We had both and were very satisfied. The flavors were amazing. For desert they offer sorbet and fresh fruit, which we skipped because we were stuffed.
While this was close to the most expensive meal we have had in years, I have to admit that it was also very memorable. If you have a special occasion to celebrate while in Breckenridge, this is a winner. Again, just make sure to make reservations and verify menu.
Pros: Chef didn’t skimp on flavor or presentation , Large portions , Great location to celebrate a special occasion
Cons: Staff is a little stiff- but very knowledgeable , Expensive- but it is true fine dining
