Soup chicken - Edit
She kept pointing at the rice and beans and saying "soup chicken". So, I assume they use chicken stock. These are all over the airport, so maybe they all do? If I'm wrong, correct me and I'll change. We went to Johnny Rockets and it was great.

The one before immigration - Edit
The only vegan option in the menu is the guacamole, but I asked the waitress and she said they could make a vegetable baguette sandwich with no cheese. It was okay, definitely not worth the price, but when it an airport this is expected.
