Best Veg Friendly Spot in Snohomish - Edit
Not a fully vegetarian restaurant but they offer plenty of veg options. Great sandwiches and veg burgers and they even have soy cheese if you ask. The self serve salad bar also has a lot of options and good combinations.
If you don't want a meal they also serve coffee, tea, and a few pastries. The alternative milk options they have are soy, almond, and coconut I believe. Some of the cookies and pastries are also made vegan.
Pros: Great food, Nice vibe, Good location
Cons: a bit pricey

Fresh and Yummy - Edit
My husband and I have been going here a while. Always fresh, friendly, fast and yummy!!! They have a veggie burger and a portobello burger w/ soy cheese that are amazing! Their hummus and chips/veggies are great. Love their guacamole: get it on your burger or/and w/ chips! Great juices and salad bar. They also have amazing soups that they run out of so hurry! The vegan brownie also isn't bad :) They recycle and compost yay!
Pros: Soy cheese, Fresh, Yummo
Cons: Wish it was open later, Parking

Great salad bar and fesh juices and smoothies - Edit
Grilla Bites has a fantastic salad bar and makes fresh juice and smoothies. Also very good soups. Some vegan and gluten free baked goods. It's cafe style, serve yourself. There's a beautiful mural of the Snohomish Valley. It's a perfect stop after biking the centennial trail.
The potato plate is a nice vegan, gluten-free breakfast option on Sundays, with vegan cheese and tofu options. But wish it had more veggies -- it's mostly potato.
Pros: organic, salad bar, smoothies/juice
Cons: lots of meat on menu, somewhat pricey
