Beans all have pork lard - Edit
This looked promising, but the waitress confirmed that the beans all have pork lard. So that leaves a couple of options like potato. That may suit your needs, but it’s basically the same as any other gorditas place. Unclear why this is in Happy Cow.

I had a delicious gordita with mushrooms and potatoes. Based on another review, I made sure to specify no cheese. Be careful with the juices. The apple juice is sweetened with aspartame.

Great spot for lunch. Didn’t have a lot of options, but we got a Gorditas with beans and mushrooms, with salsa on top. Nice staff and tasted homemade and fresh.

Vegan Gorditas and Tacos! - Edit
I was in Town for Day of The Dead, and found Gorditas Doña Lola quite by accident. The food is delicious, the sauces are amazizng! Mushrooms, beans, potatoes, veggies all in hand made corn tortillas and gorditas! Really hit the spot. Also the Hibiscus water was not too sweet and oh so tangy and delicious! 100% would eat there again. It is Mexico , however, and the times they say they’re open, may be different from day to day.
