Not a ton of options - but good breakfast! - Edit
They have a great breakfast burrito and I enjoy their seasonal coffee drinks. They completely understand when you want to change something to vegan and have tofu scrambles and vegan cheese. Unfortunately their specialty (potato pancakes) can't be made vegan, but still a good spot for breakfast before a hike!

Tofu Scramble in Eureka - Edit
Found this by chance and was very happy with their customisable egg breakfast menu. All items can be made vegan - no extra charge - and the tofu scramble with beans and avocado was nice. They even had soy milk for a cappuccino, although I can't recommend the coffee. Their tofu bacon was a bit meh, tofu-based breakfast sausage was the better out of the two choices, fresh fruit on the other hand might have been my favourite part. Super delicious pineapple and strawberries! Definitely an okay breakfast spot, if you are in the mood for tofu scramble.

Hit or Miss - Edit
I've had several great meals here and several meals that made me think someone wasn't trying very hard. But my last meal there was when I found several pieces of bacon in my scramble. They clearly reuse pans and/or work surfaces, so I no longer consider this restaurant to be vegan-friendly.

Be Careful - Edit
If you have a problem with cross contamination then you will have a real problem here. The food can be great, a bit pricey, but the potato cakes are delicious and customizable. The only thing is the grill does not have a vegetarian, nor vegan, area, and it is literally cleaned with bacon grease, DAILY. Just a heads up.
