They have a menu if vegan ice cream, but you should ask for details because some of the fruity ones are also vegan. The vegan ice cream is separately held from the others and is not displayed outside. The pistachio ice cream was OK, the lemon one was excellent.

Thank you for your visit! All of our fruit flavours, exeption the coconut, is made only by fruit, water and sugar and they are vegan at all. The Creamed flavours like pistachio are separately to avoid allergenic contaminations. We promise to put in advance to recognize it more quickly! Thank you for your tip!

Many vegan gelato flavors - Edit
I was so happy to find that at least one of the many gelato stands in the Trieste area had vegan options. After searching Happy Cow and finding limited options, I stumbled upon this one in nearby Muggia. They had about 10 flavors clearly marked as vegan available the day i visited.
