Best Street Food Noodle Soup - Edit
This stall is name Quan Chay Anh Hung and have a good quality vegetarian Banh Mi and Noodle soup in Saigon for a reasonable price. A bowl is about 22k (1 USD), and the Banh Mi sandwich is 12K Vnd. They have a few varieties of soup noodle everyday. The main one is Vegetarian Pho Bo, Bun Bo Hue, Hu Tieu and a few more. The owner is friendly but no English is spoken here. In front of the stall got some pictures so can just point to what you want.
Pros: Is delicious and fresh, Friendly owner, Soup special on different day

A really simple food cart that offers pretty mediocre banh mi and fresh spring rolls; nothing special, but you really can't beat the prices - super cheap and sometimes I get free spring rolls in the evening.
