Very tasty, tons of vegan options - Edit
Almost everything on the menu had a vegan option! My partner had a Oaxaca Mole enchilada that seemed to be filled with tofu and was very tasty. I sampled their two vegetarian (not vegan) quesadillas. Everything seemed to be made from fresh ingredients. Would definitely come back if we return to Santa Fe!

Lots of options. It seems to be mostly substituting tofu in for meat but what we had was tasty. You might have to remind them “Queso Vegano” or “No Queso” if you don’t like vegan cheese.

Fiesta Qaxaca made all my Vegan Mole Dreams come true! Pretty much everything has a Vegan option with a home-made Vegan meat-sub. We had the Mole Sampler with Chips, Vegan Mole Oaxaca, and Vegan Enchiladas, Christmas Style. So good. So Vegan. If you are in Santa Fe, go there!

There were at least a dozen dishes that were marked with “vegan option” on the menu, and they used an actual meal substitute (did not ask what it was made of as I don’t have allergies) in the dish to sub instead of just vegetables. We got two of the mole dishes and both were fantastic. The main downside that was that they didn’t have any of the dairy free cheesecake listed on their menu.

Amazing vegan Mexican food - Edit
We three had planned to go to an all-vegan restaurant for lunch, but it was closed for their summer vacation, so searching on Happy Cow I found Fiesta Oaxaca. It is around the corner from the Georgia O'Keefe Museum downtown. The outside patio is small but accommodates quite a few people. We all ordered enchiladas (See pictures) and a piece of vegan lime cheesecake and absolutely loved the food!! The menu is clearly labeled as to vegan options. The staff is delightful, especially Ivanna, our server. She told us up front they were short-staffed and the wait time could be awhile, but it wasn't long at all. I loved this restaurant and in hindsight I'm glad the first choice was closed or we'd never have gone here. Hooray for serendipity and luck! Oh, and P.S., the lemonade is really good. Not too sweet or tart, and there is a non-alcoholic beer option available.

Delicious, friendly, dozens of vegan options - Edit
Fiesta Oaxaca is one of the top vegan-friendly options in Santa Fe. While not purely vegan (they also serve meat), almost every dish on the extensive menu can be made vegan on request, and those items are clearly marked on the menu. Best of all, this isn’t a vegan-by-subtraction situation, but rather vegan-by-substitution: they have house-made (not processed) vegan “meat” and vegan cheese, both of which add a little something and are not overemphasized or heavy.

In particular, we recommend the Enchiladas de Mole de Oaxaca and the Chile en Nogada (both of which can be prepared vegan on request). If you’re with a group, it’s worth ordering the mole sampler, which lets you taste all of the different moles with chips for dipping. They also make a great vegan horchata and several vegan desserts (three as of mid-2023).
Unfortunately one of our old favorites, the sopecitas, is no longer on the menu, but the Taquitos Dorados are a worthy starter for a group, and the Garnachas Veracruz are an option one doesn’t see often.
There’s both indoor and outdoor seating, and the service has always been warm and friendly.

Gourmet Mexican and some of the best vegan food in Santa Fe - Edit
We've eaten here a few times and it's always been delicious. Probably half the menu is marked clearly with VEGAN OPTION. From the moles to the burritto, this is not what you expect when you hear Mexican food ... they really know how to cook and bring out subtle flavors and prepare elevated vegan food.

Came here for dinner and was really looking forward to it. We came a year ago as our rv travels brought us to Santa Fe to wait out the weather and fires. We dined here a few times in the same week because it was soo tasty and had many vegan friendly options (google review May 2022 https://g.co/kgs/KSw2pT).
Read moreThis visit, the dishes weren't quite as tasty. The guanabana margarita was overly sweet and only hints if of tequila; I wasn't able to finish it. The are still a number of vegan options, but some of the items are no longer on the menu (e.g. Puntas De Bistec A La Mexicana). The red and green sauce vegan enchiladas were good, but not like before. The chile de arbol salsa and black bean side are what brought the flavor to the dish.

I love that this place has sooo many vegan options! I ordered the pibil tacos (Vegan option) and they were delicious! I didn't realize they mixed tofu with mushrooms for the substitute, and for me not liking mushrooms, I thoroughly enjoyed these! I was starving after hiking so I forgot to take a photo but I did snap one of our vegan desserts! Chocolate ice cream and pumpkin cheesecake. I would definitely come back here!

It’s not often that I find a vegan friendly mole option. This restaurant has 4 different moles and all have a vegan option! I had enchiladas. The vegan filling was mushroom and tofu. Lots of other items are clearly marked on the menu as having vegan options.

So many vegan options! They'll make practically anything vegan (even one dessert, even though they were sold out when I was there)! The food was so wonderful, seemed incredibly authentic, was super filling, and was absolutely delicious. The staff was wonderful and kind - they even assured me that the dish I ordered wouldn't be too spicy for my wimpy taste buds. They have some staples and some more interesting fares if you want to try something new - I got the Ensalada dy nopalitos y jicama to share with my husband and their special Mole Rosado de Piñon. The portions looked small when they arrived but I couldn't even finish my food. So good - please go! The food also came out SO FAST!

Would give five stars if I could. The food was so good and there was lots of vegan options to choose from. The breaded seitan was also the best vegan meat I have tried in the us so far. Staff was also very friendly and told about the vegan options.
