Very good coffee with a wide range of plant-based milk sorts - Edit
We loved Ex Machina. A wide range of plant-based milk sorts are proposed (almond, soya, pea, oat etc) and the drinks are very good and not too sweet. The pea milk was quite impressive, it tastes almost like cow milk (first time that I saw it on a coffee menu!). There are a few vegan pastries (mostly cupcakes). The banana cupcake was good and original (made of buckwheat).

This is a sweet little spot out of the way of the main street in Nyon. Lovely for a drink. Thy also have a chocolate banana cupcake which is vegan.

Il proposais ce jour là un muffin banana cake vegan avec du cacao, c’était super bon et avec ça j’ai pris un matcha latte avec lait d’amande (n’avait pas de lait de soja) super goût et qualité irréprochable!

Great breakfast option in Nyon - Edit
I really enjoyed the vegan oatmeal breakfast with coconut milk, and apparently they adapt the fruits on it to each season. Also appreciated that you can choose your preferred brewing method for your coffee (aeropress, v60, etc.). It was sunny when I went and there was quite a lot of outdoor seating available. Given the few good options for vegans in Nyon, I was happy with this find for a morning coffee or afternoon break.
