Great Indian, Nepali, and tibetan food - Edit
I love that this restaurant has a variety of cultural foods including Indian, Nepali, and Tibetan. They have a number of vegan options that are clearly marked, although sometimes they mark "V-D" with "v" signifying vegan and "d" signifying dairy so a little inaccurate. But regardless it is easy to tell what is actually vegan on the menu. The mixed veggie curry and baingan bharta are both very good, and the portions are very large

My Favorite Indian Spot - Edit
Everest Cuisine is a must go if you're a fan of Indian food, and most importantly Indian buffets. Everest has a lunch buffet every day of the week which is very well labeled with what's vegetarian and vegan. At least half of the buffet is vegan. I have not been during their hours when you can order off of the menu- but from what I see online, there are a bunch of veg options. Waitstaff is very helpful and prices are fair.
