This ice cream shop has a lot of tasty vegan options.
Just be careful: The only vegan ice creams are the sorbets, except for the 2 chocolate flavors.
There is a sign on the wall, where all the flavors are listed, so pick and choose from the sorbet list (except chocolate) :)
Also, the waffle is not vegan, so take a plastic cup.

The personnel is really nice.
When we asked which flavors are without milk, the girl behind the register offered us (without us asking) to wash the spoons.

Ernest is a La Rochelle's institution. No visit to the city is complete without a stop at this ice cream parlor.
There are two locations on the vieux port (second one is Rue du Port).
A lot of flavours, it will be hard or you to choose one!
Pricey but worth it (3 euros one flavour, 4 for 2).

BE CAREFUL ! No waffle cornetto if you're vegan ! Better prefer the plastic recipient ;)

Prices are a bit high (3€/1 ball in plastic recipient ; add 20 cents for the cornetto)... But the quality is there ! Ingredients are fresh, and it's no shitty ice cream or sorbet from your supermarket. Give a try : I usually don't like ice cream at all. This time I loved !
