Vegetable enchiladas were incredible - Edit
It wasn't on the menu but when I asked about vegan options, they offered the enchiladas. They were incredible and I cannot stress that enough. There was so much flavor. It was not a "fine, we'll make a dish for the vegans to shut them up" dish, it was as good as anything on the menu.

Good vegan enchiladas - Edit
Nothing on the menu was vegan, but when I asked, the waiter said they could make vegan enchiladas. They were very good. And they even specifically made the side of rice abcs beans vegan (didn’t add cheese on top) and told me they were vegan when they gave it to me. Was impressed they really knew what vegan meant and included the sides.

Hidden gem! - Edit
We sat at the bar here, the place was busy and had a great atmosphere so I suggest you book. There are no vegan options on the menu but the bar man was super helpful and said the chef can make vegan enchiladas which we went for along with a corn salad. There were a few other options also. Food was some of the best we've eaten since arriving in Arizona, would be nice if they labelled vegan options on the menu but don't be put off by that!
