Located in the food section of Plaza de las Americas, near the Gordita places. Large selection of food including Mexican specialties plus veggie burgers and yogurt/fruit bar. Sells some pastries and teas. Est. since early 2000s. REPORTED CLOSED, JAN 2017. Open Mon-Sat 9:00am-7:00pm.

no-frills snack spot - Edit
This is a great place for very simple, cheap meals. It's geared more towards vegetarians but they are happy to provide some vegan options. The restaurant has been open for more than 20 years and has a very local feel.
Note that the instructions made it a bit hard to find; the store is not actually in the food area, but on the far side of the "Plaza," on "Andador Peru." I've sent an update of the map market and address to show exactly where it is located. Worth stopping by to support hearty, no-frills local veg food. Burgers, tinga, smoothies, soups, and plenty of soy/gluten options. Very inexpensive.
Pros: cheap, friendly, convenient
Cons: a bit difficult to find, limited selection
