Several good South American vegan options

I stayed at this resort as part of a work function. It’s a great resort, all inclusive, and overall fairly vegan friendly. This restaurant is their South American restaurant, with dishes from around Latin America. At this restaurant, and with all the restaurants, the staff were very well-versed on Vegan needs. I was able to get an appetizer, an entrée, and a dessert without much trouble.
