well-marked veg options - Edit
I've been at El Paladar a few times and find it a good alternative if you don't want to go to Alameda Rock/Organic's/Veganitessen/Gaia.
There are three separate menus: standard, vegetarian and vegan, and the number of options is impressive. It gets pretty crowded from 21:00 onwards for dinner, so try to get there early! At lunchtime is usually fine.

We enjoyed our meal at El Paladar. The food was tasty. The vegan menu is clearly posted the the woman who is cooking clearly understands vegan. They suggested a lentil pottage to start that was delicious. I had couscous with vegetables and my husband had the vegan lasagna.
This is a hole in the wall restaurant, fun to walk the neighborhood and find this place. Off of Avenida Hercules which is a nice promenade. We would go back.

As others say, there are three boards with tapas menus, one all vegan. We had spinach cannelloni & "papas y mojo" (crispy almost like roast potato with a red dipping sauce). For 2 beers each & 2 tapas we were full - it came to Eu10.40. Bargain!
But it does get busy and as they have some items on both vegan and other board... It's worth stressing if you are vegan, just to be clear!
I think this may be a family run place and that is rather lovely :)

While obviously not all vegan/vegetarian, they still have some amazing parodies, including the most amazing vegan lasagne I have ever eaten. I liked it so much a ordered another one to take away. One of the waiters was really nice and spoke very good English, if you can't speak Spanish. Very reasonable prices, highly recommended :)

While they also serve meat, El Paladar has really great vegan and vegetarian options - including an entire separate menu for vegans with 10-15 options. Choices seem to rotate, but included lasagna with soy meat, spinach pasta in a "cream" sauce, roasted eggplant, cous cous, croquettes, papas y mojo, among others. Nice, laid back vibe. Cash only

... stop what you're doing and if you're anywhere near El Paladar, go there right now!
This looked like a regular tapas bar from outside , but inside there's a full vegan menu and a full vegetarian menu in addition to the 'standard' selection. Food is delicious and staff are both friendly and knowledgeable - one of a very small number of places where they were actually aware of the differences between different types of veg*n diets and what is/isn't acceptable.
Pros: Lovely food, Very reasonably priced, Friendly staff
Cons: You might eat too much!
