Great Mexican Vegan Options - Edit
El Gitano is our favorite place to eat when we visit Bellingham (Although I just learned about Wild Oat and will have to try them soon). It is a classic American style Mexican restaurant and sometimes even has a Mariachi band playing. There menu has a vegetarian section which many items can be made vegan. My favorite are the tofu enchiladas with no cheese or sour cream. My husband gets a veggie burrito that has French fries in it. Wait staff are always quick, friendly and helpful.

Good Veggie Options - Edit
The menu has a good variety of vegetarian options, which they are happy to customize to make vegan. Excellent flavors, generous portions, and they actually know how to cook tofu properly!
