Good to stock up on veggies and carbs - Edit
It's one of the only healthier options you'll have here. I ate rice, veggies, salads, potatoe etc. Be careful as nothing is labeled. They have plantmilk for hot beverages. Good prices!

Best vegan option in Puerto Iguazu - Edit
As the title says (but that's more of a reflection on Puerto Iguazu for vegans than on the place itself). Can get pretty nice carbs and veg without much trouble but basically no vegan protein sources here (apart from a few black beans in a salad). The best option if you want a good amount of food, but be aware it will be basic

Great buffet with local style food. About 1/3 of the options were vegan, and about 1/2 were vegetarian. Mainly vegetables and salad, with some rice and lots of different breads. Would have been perfect if they had some vegan protein options.

It is a buffet. They offer several options, such as rice, potatoes and sweet potatoes, grilled vegetables, some types of beans and vegan bread. You can eat there or have it to go. It is not very expensive
