Good enough - Edit
In Eataly there is a pizza stand and the Rossa and Bianca is vegan (I checked allergen list). Note they use same ovens and knife as all pizzas though so not safe for dairy allergy. Tastes pretty good

A couple of vegan options - Edit
A couple of vegan croissants available for breakfast, and a couple of (naturally) vegan pizzas for lunch etc (focaccia bianca and pizza Marinara). They have soy milk for coffee and various fruit juices, including freshly squeezed orange juice. Don’t expect a lot of options in this airport, so good to have at least a couple here. Prices are in line with the rest of the airport.

I was there for an early flight which may be why, but I didn’t see anything vegan on the menus at any of the stands. The only vegan option was a fruit croissant, which I got two of, because there was literally nothing else in terminal 1 for me. I actually ended up really enjoying them though and it was a good enough breakfast

Had the veggie poke bowl & surprised how fresh & tasty it was. Good portion size too. They had some other vegan options as well.. mostly salads & fruit cups.

They didn’t have vegan, but I could get a pasta dish without cheese. Way too expensive for what I got, and it didn’t taste much. The spaghetti was hard, not boiled long enough.

Good option for an airport - Edit
I got a soy cappuccino at the coffee area and the "specials" eggplant and hummus sandwich and rossa pizza at the pala pizza place. Would be nice if vegan options were labeled as such so I didn't have to hunt through the allergen guide, but it was all delicious, if expensive (but it is an airport). Did not see any vegan croissants or pastries.
