Vegan options clearly labelled - Edit
Rather than order a particular dish, you grab a big metal bowl and pick out what you want eg tofu, spinach, cabbage, etc. Whatever is vegan is clearly labelled "V". You go to the counter with your bowl and then ask them to put in the soup. There is a vegan soup option. Then you select how spicy you want it.
