Doable, not easy, but doable - Edit
I used to go to weekly early morning business networking meetings at Delia's and always got the same thing: the veggie skillet without the eggs or cheese and with added avocado. They charge extra for the avocado but and I asked for a double helping of the broccoli or other veggies. Here's the description:
Veggie Skillet—A skillet full of hash browns topped
with fresh broccoli, mushrooms, peppers, onions,
tomatoes and mixed cheese. Topped with 2 eggs,
Awesome coffee BTW. I think this is the local spot for Intelligenstia brand coffee. Great stuff.
I have gotten two sides before as well: hash browns and fruit, although the fruit is not the best selection. Last I checked, the toast wasn't dairy free, milk or something in it.
Pros: 1980s diner atmosphere, great coffee in porcelain diner mugs, willing to edit some menu items
Cons: 1980s diner atmosphere (could be a pro or con), food ok, you're here to fit in with your fam tho, could use more vegan options

Decent for vegetarians-needs some vegan options - Edit
Delia's is a really cute, huge spot. It feels very much like an old school, greasy spoon diner, which I personally really like. For vegetarians, they offer all kinds of standard breakfast/brunch items like pancakes, waffles, hashbrown skillets (which you can get with no egg and no cheese), etc. A vegetarian could easily eat here. For vegans though, there really did not seem to be too many options.
The staff are really friendly and they do offer some awesome support to PADS in the area (coffee and meals to people down on their luck)-which is really great. Just wish they'd consider offering something vegan so I could bring my vegan friends here!
