Good vegan options - Edit
It's nice to find a restaurant with so many vegan options. The dishes are a bit pricey, but it's real food and everything is well-executed. We just didn't try the desserts. Given a service error and the fact that the vegan dishes offered weren't very high in protein, I'm only giving it 4 stars.
Read moreThe staff is friendly and speaks perfect French. However, their communication and attentiveness could be improved. The place is spacious, quite elegant, and cozy all at once.
Day 1 / Lunch:
We ordered:
- a pasta dish (papardelle) with cashew/parsley pesto and pumpkin cream.
- a fried rice dish with chickpeas, vegetables, and curry sauce.
When the dishes arrived, we noticed that there was chicken on the pasta dish, even though we had clearly stated several times that we wanted the vegan version. It's a shame because we had to wait for the dish to be remade before we could eat together. Both dishes were very good.
Day 2 / Lunch: We tried the mushroom soup (vegan) and the butternut hummus toast (vegan). The soup was good, a little too salty for our taste. The toast was excellent.

Cozy backyard, lovely food. The "small" nachos were HUGE, I'd be scared to see the normal portion... but so delish. After that I had a coffee and tried the Frangipane - an almond cake made by chezmariette. Never had anything like it - it was amazing. Out of curiosity I also ordered chezmariette's biscoff brownie, unfortunately it wasn't very chocolatey and overall not what I expect from a brownie. Nonetheless, this restaurant is worth a visit. The staff is also very friendly.

Had dinner inside this time. Service was again quick and attentive.
The focaccia was made in heaven, crispy bread with unbelievable flavourful bruschetta on top.
I was able to get the pasta in a kids portion, but I doubt the normal portion is much bigger. Yet it was way cheaper. Amazing! And again sooo tasty. Usually tomato-dishes are the "boring-vegan-go-tos" for restaurants but this place perfected them.

Great selection of vegan food, with vegan specials updating often. Fresh vegetables with great flavour. Only marked down as I would’ve like some protein like tofu or tempeh!! Great meal overall. Beautiful garden area and amazing service.

Inedible and bland - Edit
I ordered the vegan stir fry and it came drenched in soy sauce, making it too salty and inedible. I returned it to the kitchen, which is rare for me. Besides the salt, the dish was rather bland. It needed some herbs and spices. The fresh juice was good though.

A large, popular, and beautiful restaurant with many clearly marked vegan dishes. The menu changes weekly but I had the vegan lentil stew with carrots, celery, tomatoes, and peppers with naan bread. Sorry for not taking a photo, but the dish was delicious.

Note that one dish was incorrectly marked vegan (the waitress was going to have it corrected) and that you need to choose vegan dishes because dishes marked plant based are not necessarily vegan.
I would return here again.

They have clearly labelled vegan and plant-based options, it is a good place to go with family and friends that are not necessarily vegan.
The vegan cake was reaaally good, baked by a local baker (not the restaurant).
Nota bene :
You might be confused by Maps, the entrance is the GREEN door, not the yellow one 5m ahead.

Perfect compromise for a vegan with fam - Edit
I’m vegan and travelling with my family. One member is a little less keen on going to a full vegan restaurant. So this place was the perfect compromise. The vegan options AND allergies were clearly labelled which is very important for a vegan with severe allergies.

although the pasta dish misses some bite (like chick pieces, or seitan).
Portion of olives (with our drinks) is 5€.
We had a brownie and frangipanne cake and coffee and tea. 8€ a piece for cake. Steep price!
Coffe still comes with non vegan milk. Didn't bother anymore asking about the cookie ...

Menu now mentions 3 vegan dishes and also vegan starters and vegan pastry! Improvement! Menu is with QR code.
Had a soup of the day (always vegan) which was miso and carrot. Toast with mushrooms and a lemonade.
For dessert a piece of frangipanne cake (from chez mariette) and forrest fruit tea.
Service was swift.
Food was nice. Didn't get any bread with soup (although noted on menu) so asked. Ok, then got bread, with non-vegan butter though. No vegan butter available unfortunately. Same for cookie that came with the tea. Those details really would make me smile 😉
Fully accessible place, with accessible toilet. One of the few in Bruges!

2018: De Republiek was nicely renovated in the Fall of 2017.
It is now a spacious and bright place. They were still working on the inner terrace when we were there, but it looked like it would be a nice terrace.
Only one vegan dish: the Saint Tropez, an ovendish with vegetables (sweet potato, chickpeas, broccoli and paksoi (17€). It was nice, but not really wow. The chickpeas were really hard too.
We asked about vegan dessert, but the waiter said none of the desserts were vegan.
We afterwards heard that Chez Mariette delivers vegan pastry to De Republiek, but apparently there wasn’t any available that day, or the waiter must have been unaware of it.

We had a delicious meal here and felt that there were sufficient vegan options to choose from. Vegan items are clearly marked. We shared a bowl of the vegan soup of the day (paprika) and two entrees (lentil stew and cous cous salad). Everything was delicious, hot, and fresh. The place is cozy and the staff were very welcoming.

Being a Monday the places we’d planned to visit were closed so it was nice to come across this beautiful place. Gorgeous interior. Although we hadn’t booked they found us a table. The menu is a QR code so we had to work round that but there were quite a few vegan options. B had the soup of the day which was vegan and I had a tempeh and tapenade dish, lovely. The fresh mint tea was lovely too.

Quality vegan options at this hidden gem - Edit
We were recommended this place and so glad for the tip. Walking by it’s hidden away but step inside and it’s a huge, modern restaurant. There were a couple of vegan starters (we had the lacquered tempeh) and a couple of mains (we had beruit (tempeh and roasted veggies) and the Hokkaido (noodles and tofu ramen) both dishes were huge and super tasty. Sadly we didn’t have room for the vegan pastry on offer. The selection of beers on offer was also excellent.
