Plenty of vegan options - Edit
I went here for lunch and was delighted with the amount of vegan options de Prins could offer. On the menu none of the dishes are marked as vegan, but they said the soup, salads and flatbread are vegan or can be modified to be vegan. I ended up having a super delicious flatbread with hummus, some salad leaves and various grilled veggies. The veggies tasted fresh and the meal had lots of flavour. Overall a very yummy and filling meal.

Cozy place near the canal - Edit
Café is located in the city center near the water canal. Possibility of sitting outside. Very tasty coffee with milk alternatives and lemonades. Clean toilets and nice atmosphere. Unfortunately there aren’t many vegan food options, you need to ask if they can prepare some vegetarian meals without eggs etc. I’ll also appreciate menu in English.

First, I disagree with Happy Cow's policy of taking a star away from non-vegan restaurants. This place deserves 5-stars for how much they eagerly accommodated my partner and me.
Read moreWe were kayaking along the Linge river and we decided to spend a night here at the hotel. When I made the reservation, they asked if we would join them for dinner. I had looked at their menu and it didn't look especially vegan friendly. The woman on the phone told me they would happily accommodate us. I told her we'd think about it.
When we got to Buren, we decided to take a walk around town to see what our options for vegan food were. There was very little to choose from. So, we came back to the hotel. Even though we had not confirmed whether we would have dinner there or not, the kitchen was fully prepared and happy that we'd decided to eat dinner there after all. They made us a special dinner with starters and mains as well as a delicious granita for dessert. The food was fresh, artful and innovative. They used seasonal produce and while the meal was heavy to vegetables (no beans/tofu/nuts), it was still lovely. It's obvious that their chef/cooks are passionate about food. I'm sad to say that I didn't take any photos of the dinner.
We had breakfast at the hotel the next morning. They gave the two of us a veritable mountain of fruits, vegetables, house made hummus and other spreads, peanut butter, house made breads, fresh juice, and coffee with oat milk.
The whole experience wasn't cheap, but it was really lovely. I do recommend calling ahead if you plan to have a vegan dinner. Their lunch and borrel menus seemed to have more vegan options than the dinner menu.
Pros: nice terrace overlooking the water, artful, fresh vegan cuisine
Cons: not cheap, vegan options not immediately apparent
