New years resolution: go vegan!

"De Bijenkorf" (the bee hive) is The Netherland's premiere luxury department store. This is where fashion aficionados find all the luxury brands of clothing, perfume and makeup. The in-house restaurant called "The Kitchen" is aimed at a high class audience as well. This is where one expects to have a caviar and champagne lunch. This place is about glamour, not about health or sustainability.

So I was pleasantly surprised to be greeted by a big sign at the entrance of the restaurant that says: "our new years resolution is to offer vegan food". It doesn't mean the entire menu is now vegan. It does mean that as of January 2019 sell vegan food of the same high quality as the other offerings.

And it isn't just one or two items! De Bijenkorf offers a vegan taco, vegan croquette, vegan sweets, vegan "kapsalon" (a traditional Dutch meal that I don't fully understand) and even vegan sashimi. The latter looks exactly like sashimi made from tuna, but instead it's made from tapioca and seaweed. It's presented on a beautiful plate with some salad, edible flowers, wasabi and soy sauce. Since I've never eaten fish sashimi I cannot compare the taste to the real thing, but I can tell the structure is a bit rubbery yet easy to chew (comparable to Japanese kanjac). The taste is mild, not resembling vegetable or salty seaweed.

While not the most special lunch ever, I do appreciate the effort of this department store. It means they can now serve a wider audience and they offer vegan varieties that are hard to find elsewhere. I'd certainly be back to try the rest of the vegan menu!
