Local ice cream shop. Offers 4 or so vegan flavors (cashew base) daily and has vegan cone and vegan cookies for making ice cream sandwiches. Its mobile cart sells ice cream around town. Open Mon-Sun 12:00pm-10:00pm.

vegan ice cream - Edit
First time having vegan ice cream. Vegan ice cream is a novelty to me and not something I'd eat regularly. Tried the roasted banana walnut. I liked it and it tasted good to me. My non-vegan husband said it tasted weird, YMMV.

Creamy Vegan Cookies and Cream Scoops! - Edit
Kudos to them for offering both vegan scoop and soft serve options! The cookies & cream scoop was so creamy and delicious that it earned them 4-stars. I got my vegan scoops in a sugar cone because if I remember correctly, the waffle cones aren't vegan. (Correct me if I'm wrong and I will happily update.)
The main downside is that there isn't a smorgasbord of flavor options, but luckily they had one flavor that I liked. Also, be aware that the vegan ice cream is cashew-milk based, so if you have nut allergies you're SOL.
Pros: yummy vegan scoop and soft serve options
Cons: parking, no nut-free options
