Bowls and tacos can be made vegan by swapping Mexican rice with either the coconut rice or cauliflower rice. Swap queso/sour cream for extra guac. Vegan filling choices include seasoned Impossible burger meat, veggies, potatoes. (Note: The "house mix" for cocktails may include non-vegan Clamato juice. Please inquire.) Very tasty, excellent staff support for vegan dishes - Edit
Very tasty Mexi-themed bowls! We got the Santa Fe bowls and veganized them by subbing Mexican rice for cauliflower rice, which was delicious. (Can also sub coconut rice, which my dining partner says was delicious.) We both got Impossible as our 'filling', which was nicely seasoned and went well with the other flavors in the bowl (black beans, guac, very fresh crunchy romaine strips). We subbed extra guac for the queso/sour cream. Make sure you EMPHASIZE no sour cream, because the staff seems to have a habit of drizzing everything with it. We've been here twice, and BOTH times the bowls had to be remade because they drizzled the sour cream on top of the otherwise-completely-vegan bowl. Also must mention the amazing thick, crunchy homemade chips and 4 types of salsa, YUM, that were endless. The server kept bringing more! (and we kept eating them!)
Read moreAlso note -- this restaurant uses a "House Mix" in some of their cocktails that includes Clamato (NOT vegan, has clam powder). We discussed this with the server and manager, because it is NOT marked clearly on the menu in all beverages where it is incorporated, and not only is that non-vegan, but potentially dangerous for those with shellfish allergy.
Also, our server was really incredibly supportive of our vegan choices and our concerns about the cocktails. It was great to feel supported rather than snubbed.

Note! We went back again this past weekend and they upcharged us $4 for switching the queso&sourcream for guac. We could not convince this particular server, but after some hassle, they did finally remove the upcharge. You may have to fight for it! DO IT!
