Few options - Edit
The resort has a main restaurant, bar, and room service. Food is somewhat similar between all three. As both a vegetarian and someone with food allergies, options were very limited. This seemed needless, given many restaurants in the city have a broad menu for vegetarians and allergens. It was an added problem given the resort is remote to the remainder of the island with no access to outside food delivery.
Read moreI was able to order their house chips and fries (both have cheese, so not vegan). They have pizza, but not without meat, and not GF. They have pasta-no option to make vegetarian. They have a Mexican stand at the pool with tacos and other menu options which could be easily adapted, but for some reason could not.

the first night we arrived at the resort my in-laws kindly picked my husband and I up some dinner, which had to be heavily modified in order for it to be made vegan. the cauliflower and mushroom sesame lettuce wraps were our favorite, but the kitchen sent us some pasta which inexplicably had carrots and broccoli stems mixed in ....? the pasta with red sauce was good and maybe the chef was trying to replace other things but if you wouldn't eat something yourself why are you giving it to vegans? we picked out most of the broccoli stems and carrots.
Read morethe next morning we got breakfast with the whole family and asked our server (who was very nice) if there were any vegan options and he kind of laughed and said "uhh, the fruit plate?" and also said if we wanted to remove anything from a dish we could make modifications but we didn't want to pay $20 for some avocado toast that we had to remove eggs and cheese from. we got sides of breakfast potatoes with a side of 1/3 of avocado each and it was somehow $40 before tip? even though the restaurant was pricey we did the math and it still didn't add up.
pricing aside, it wouldn't be so hard to add a tofu scramble with potatoes and avocado to the menu, or to veganize the waffle or pancakes already offered so vegans and people with dairy and egg allergies could be accommodated. the poolside restaurant offered a vegan chorizo taco with a cashew cream which could easily be made into vegan chilaquiles for pete's sake!
my husband and I ended up going to downtown San Diego for food in the morning for the rest of our stay despite our breakfasts at the hotel having a $60 comp from our booking and it being 20-30 minutes by car each way everyday, it just wasn't worth it.

Despite being told that they had a vegan friendly option before making a reservation, they actually had zero entrees that could be made vegan.
