Fine dining in casual setting

We've eaten here twice now and I'm wondering why it took us so long to return. We had the four course menu, which can be vegan despite only a vegetarian version being given on the website.

Everything was excellent. Stand out dusges/ingredients were the tomatoes with sesame and garlic, lotus root pickle (zing!) and aubergine with chilli and macadamia.

The wine/sake pairing was very good too.
