Serves meat, vegan options available. Small restaurant with a few big tables in an old room that previously was a bakery. Then you have just to come in, sit at the table, order your wine (or anything else like water or herbal teas) and wait for Marilu's preparation. Usually is a four/five courses menù (from starters to dessert) with some possible tasting of extra small portion which you will be requested to give an opinion for future guest. They don't have a menù list, but the dishes will be presented to you at your arrival. Call ahead to let her know your requirements. Open Mon-Sun 12:00-22:00.

La scelta degli ingredienti qui è Reggina

L'attenzione alle materie prime è la prima preoccupazione della titolare che oltre che cuoca serve anche ai tavoli. Un ambiente dove anche l'occhio vuole la sua parte, le stoviglie sono ricercate e raffinate all'interno di una sala che ci riporta all'inizio del secolo scorso attraverso vari cimeli e collezzioni. La tavola e il servizio sono curati con la massima attenzione. I vini sono ecellenti e le pietanze sono il risultato della ricerca e del buon gusto della titolare attraverso la scelta di ingredienti per lo più locali e biologici. Una deviazione a Borgo a Buggiano assolutamente da fare prenotando e esprimendo preventivamente i desideri del proprio palato.

Not a classic restaurant

Cookobio is not a classic restaurant but is more like to be invited at home.

The owner and chef Marilù will prepare your lunch or dinner according to the ingredients she will find the same day at the local market (most of the time from organic production), so it’s important to book in advance to give her time to prepare a good and surprisingly menu.

Because she use also fish and meat, you need to specify at the time of booking that you want a vegan/vegetarian menu and also any ingredients you don’t like to be used in your dish preparation.

Once at the restaurant, Marilù will tell what she has prepared for your meal (generally a four/five course menu from starters to dessert) and you can chose to eat all or a part of it. Even if it was a lot of food, I have taken the full menù that was really delicious.

During your meal, you may also be requested to taste some new Marilù’s recipe to give your opinion about it for future guest (she is interested in expanding her knowledge of vegan/vegetarian dish).

Everything is home-made including 3-4 different types of bread.

The restaurant is not big, there are six (or seven, I don’t remember exactly) big tables in one room that was previously a bakery, but it’s cute and nicely decorated.

Price are moderate (about 30-40 euros per person including wine).

As a last tip, if you have 2-3 hours available don’t miss to visit Buggiano Castello (3 km up to the hill above Borgo a Buggiano) and its lemon-tree gardens.
