For example, get the nopal salad or remolacha (roasted beets) without the cheese, or the roasted cauliflower in oil instead of butter. The guacamole is vegan as is. Open Mon-Thu 8:00am-10:00pm, Fri-Sat 8:00am-12:00am, Sun 8:00am-10:00pm.

Tasty last option

This is not a very vegan friendly place. However, if you find yourself in Santiago NL, this is a safe bet to be able to fill yourself if you're willing to sound annoying to the waiter by asking to modify the whole menu. The food is good nonetheless, but on the expensive side for a mexican place (7 to 10 USD per starter). The music is also a bit loud.
If you find another better option in Santiago for vegans, please list it, I would not recommend this place if there was literally anything else available in the city.
