Good options - Edit
There is not much in Mendoza, therefore I was quiet happy to find this place. They have vegan cheese & meat, which is a great option. Local food, burgers, sandwiches etc. Taste was good.

La atención al cliente fue un 10 y la comida riquÃsima! Somos veganos y tanto el jamón como el queso que usan son veganos y muy ricos. El plus es que venden asado, chorizos, brochetas y otros congelados. Además se pueden hacer encargos por WhatsApp.

Lots of vegan options - Edit
San Salvador de Jujuy has not many vegan options, highly recommended for travelers to check this place out. They make vegetarian versions of typical Argentinian food, most of which can be made vegan. The empanadas criollo were very tasty.
