Vegan options if asked - Edit
The menu has a "Vegetarian" section (not a separate menu), which consisted of a number of items that could be made vegan.
Our server wasn't very familiar with what was vegan on the menu but once she went to the kitchen, she came back with a list from the Chef herself with what she can do vegan.
The Eggplant "Mignon" With Chickpeas was very good - highly recommended. We also got the Purple Potato & Mushrooms Ceviche Peruvian Causa, and a salad which had pecans, figs, and caramelized onions.
Finally, for dessert, they were able to come up with a vegan plate that had coconut cream, some jello-type thing (made with agar), and mini raw brownies. It was very tasty.
This is an expensive place, but it is one of the more highly rated restaurants in PR.

best vegan fine dining ever - Edit
I went here for my boyfriend's mother's birthday. There were no reviews on Happy Cow, so we didn't know what to expect... but WOW! It was fantastic!
We were skeptical when we saw that the recommended menu was a 4 course meal of little plates, mostly with meat, but we told our waiter were 2 vegetarians and 2 vegans and he showed us the separate vegetarian menu and made sure we had an excellent experience. Some of the vegetarian items weren't vegan-friendly, but the chefs cooked us vegan versions of everything (except the ricotta gnocchi, b/c the ricotta couldn't be removed) and everything were still absolutely delicious.
The dishes here are creative, delicate, filling, and delicious. The aubergine "mignon" and carrot blinis were so good, we ordered them twice! We ordered 3-4 plates per person so at ~$10/plate it is on the expensive side, but definitely worth it. I would come back to Puerto Rico just for this restaurant!
